This is a classic and simple vegan breakfast recipe. Everyone loves potatoes for breakfast, but the traditional recipes usually involve frying potatoes in animal fats, which produces a lot of cholesterol-laden grease. Avoid all of that and save the animals at the same time with this new, equally delicious “veganized” version!

Breakfast Homefries

  • 3 russet potatoes, scrubbed
  • 1 onion, thinly sliced
  • 4 tsp soy sauce
  • 1/2 tsp black pepper
  • 1/2 tsp paprika or chili powder
  • 5-6 cherry tomatoes, cut into quarters (optional)
  • 2 green onions, thinly sliced (optional)

For this vegan breakfast recipe, cut the unpeeled potatoes into 1/2 - inch cubes and steam them until just tender when pierced with a sharp knife, about 10 minutes. Remove from heat and set aside. Heat 1/2 cup of water in a large non-stick skillet and add the onions. Cook, stirring frequently, until the water has evaporated and the onions begin to stick to the pan. Scrape the pan as you add another 1/2 cup of water, then cook until the onions once again begin to stick. Repeat this process until the onions are very brown and sweet. This will take about 15 minutes. Add the diced potatoes and sprinkle with the soy sauce, black pepper, and paprika or chili powder. Cook, turning gently with a spatula, until the potatoes are golden brown. Garnish with cherry tomatoes and green onions if desired.

This vegan breakfast recipe is especially good topped with applesauce, or black beans and salsa!
